Stages of Vanilla Harvesting

Stages of vanilla harvesting need a delicate balance between moisture and average temperature:

  • Beans are cut from the stem with the help of a sharp knife. This is the time when they are green and odourless. 

  • Farmers use their traditional curing method to cure perfectly flavourful Vanilla beans.

  • During the day the vanilla pods are kept in the sun wrapping in blankets at night for the step known as “sweating.” It brings out their inherent flavour and aroma. 

  • Then comes drying. Here the vanilla beans are laid out into the hot sun all day and then brought inside at night when their moisture content is down to 18%-35%. 

  • Once dried, next comes grading. The beans are graded depending on their shape, quality, and moisture content into various categories like “grade-A”, “grade B”, “gourmet”, “black”, etc. Indonesian Grade-A and Grade-B vanilla beans are based on moisture content, while “gourmet vanilla beans” or “black” are much more subjective. 

It takes up to four years from planting the vanilla bean to the final product packaging. That’s why vanilla beans are one of the most complicated fruits on our planet.

EXPERT TIPS TO ENHANCE THE LIFE OF VANILLA BEANS

  • Storage: Experts recommend submerging beans in 70-90 proof alcohol if you want to keep the beans soft and supple and prevent mold growth for a really long time. Storing beans in the refrigerator or freezer is not a good idea. Rather, you can vacuum seal the beans. Even though it is not a permanent storage method just like alcohol, it will easily extend the shelf life for up to a year.
