  • 1 cup heavy cream

  • 1 vanilla bean, split lengthwise

  • 1/4 cup granulated sugar, plus extra for topping

  • 2 large egg yolks

  • 1 quart hot water for the baking dish

Instructions:

  1. Preheat your oven to 325°F (162°C).

  2. Prepare the vanilla cream: Heat the cream and vanilla bean in a saucepan until it boils. Then remove from heat and let sit for 15 minutes.

  3. Mix sugar and yolks: In a bowl, whisk the egg yolks and sugar until well mixed and slightly lighter in color.

  4. Combine cream and yolks: Take out the vanilla bean from the cream, scrape any remaining seeds into the cream, and mix them back in. Slowly mix the cream into the yolk mixture, stirring constantly.

  5. Set up the baking dish: Pour the mixture into two ramekins. Place these in a large baking pan and fill the pan with hot water halfway up the sides of the ramekins.

  6. Bake: Place the baking pan in the oven and bake for about 45 minutes, or until the custard sets but is still a bit wobbly in the center.

  7. Cool and chill: Remove from the oven, let cool, and then refrigerate for at least two hours.

  8. Caramelize the top: Sprinkle sugar over each custard and use a torch to melt and brown the sugar.
